This is my parmesan crusted Salmon Caesar salad it's crisp and creamy with A nice saltiness from the added cheese I Love to make this for dinner when I've Got a good appetite but I don't want Something too heavy I just stir Mayo Fish sauce and a handful of other common Staples into a bowl to make the easiest Caesar dressing there's no chopping no Blenders no emulsifying and I use some Of that dressing to coat the salmon Which acts like a glue and helps the Parmesan stick I served those fillets Over chopped Roma with the rest of that Simple dressing peppery croutons and Sliced red onions for more crunch
Have you ever wondered why most of the Vinaigrettes in the grocery store are made with 10, 20, sometimes even almost 30 ingredients? I remember growing up in Provence watching my mother whipping vinaigrettes before every single dinner.  She would mix in a giant bowl, delicious extra virgin olive oil, a robust aged vinegar (the flavor would depend on the main dish), sea salt and pepper and voila!
