This is a good thing! As you know oil and vinegar do not mix in a natural world. In order to mix them or “emulsify” them you need some type of glue or also called “Gum”. At Provence Kitchen we refuse to use Glue or Gums as it has many side effects to the human body. We do not and will never use Gum in our delicious products!

I remember growing up in Provence watching my mother whipping vinaigrettes before every single dinner. She would mix in a giant bowl, delicious extra virgin olive oil, a robust aged vinegar (the flavor would depend on the main dish), sea salt and pepper and voila!
