When the water is completely gone, only white crystals of salt remain. Professionals called “Sauniers” using giant racks called “etelle” hand-harvest the white crystals or salt. Then the white salt is washed, crushed and sorted by type; fine or coarse and left to dry with the help of the Mistral. Our Coarse sea Salt is mostly used when boiling vegetables, meat, etc..
