How to Make Authentic Bolognese Sauce with a Provencal Twist!
I have cooked this dish for thousands of people throughout my life while I was working in restaurants in in the Alpes and in Youth centers in the Uzes area, in Provence.
I prepared this wonderful pasta dish with my father during the after game soccer city lunch in the park.
I even enjoyed teaching this dish to students who participated in my classes at the Cambridge Center for Adult Education for more than 10 years!
I tried to perfect my recipe over the years, and what you will see in this video and below is the result of 50+ years of trying.
I heard a few years ago that Ming Tsai of Simply Ming, WGBH was asking what the secret was to making the best Bolognese sauce.
Well, Chef Ming, if you read this, I’ll tell you what it is.
My authentic “Jean-Louis Provence Kitchen Herbs de Provence!”
That’s right. My Herbs de Provence, which I put together over 30 years ago, is sold locally at various farms and Wholefoods stores in the New England area.
I call it “the Swiss knife” of any recipe.
With my Herbs de Provence, everything tastes better.
Anyway, here’s how I make my best pasta Bolognese!
I prepare and put aside all my ingredients.
First, I mince a fresh sweet onion and 2 cloves of fresh garlic.
Then I grate 2 cups of Parmesan cheese.
I put aside 4 cups of water (for the sauce), I open a Pastene 28 oz Crushed peeled tomatoes, and I add 2 TBSP of my Herbs de Provence in a small glass container.
I get my double boiler, which I fill with 16 cups of water and 3 TBSPN of my own Grey Sea Salt.
I also get a large Dutch Oven cast iron ready.
I take the ground beef (85-15) out of the fridge in its packaging.
Authentic Bolognese Sauce Recipe
The Sauce (with my secret) - Step by Step
1- Once I have everything ready, the first thing I do is sauté the minced onion in the Dutch oven for 3 minutes with the lid on at medium heat.
2- I then add the minced garlic along with the gray sea salt and freshly ground black pepper.
-> I cook, lid off, for another 3 minutes while stirring.
3- Once I get the onion and the garlic tender and with a nice color, I add the ground beef.
I incorporate the beef into the onion and the garlic.
-> I cover my cast-iron pot for 3 more minutes.
4- I then remove the lid and let the extra liquid to evaporate for another 6 to 9 minutes, depending if I am using fresh or frozen meat.
-> The goal is to get a nice color at the bottom of the pot while stirring constantly to avoid any burned meat.
-> That will add a wonderful flavor to the dish.
Remember, the stove is set to the same medium heat throughout of all of these first steps.
5- Then I add the crushed peeled tomatoes.
7- Once the can is empty, I fill it with the 4 cups of water that I have put aside earlier and pour to the pot.
And then, that is where the magic happens!
8- I add 2 TBSP of my out-of-this-world “Jean-Louis Provence Kitchen” Herbs de Provence.
I stir and cover the dish and let it cook for another 9 minutes.
The Pasta - Mama Mia! That is what I called my sweet mother Yvette
1- While my sauce is cooking, I put my double boiler on high heat and add the 16 ounces of water, the 3 TBSP of Gray Sea Salt and one tsp of Olive oil (helps the pasta not to stick together).
2- Once the water boils, I add the pasta and cover.
4- Once I get to the boiling point, I reduce the heat to medium.
5- I look at the pasta packaging and follow the cooking time directions.
6- I then set my timer to that time. Usually, 9 to 12 minutes, depending of the pasta.
Note: The Pasta Bolognese is usually cooked with spaghetti.
However, I found that the Pastene Italian Pappardelle Pasta is a much better choice for this particular dish. The pasta is thin but larger in width, so it “sucks in” more of the delicious sauce, making it even more flavorful.
7- 3 minutes before the end of the pasta cooking time, I remove the pasta from the boiler and pour them into the sauce.
-> I stir more, making sure that nothing sticks in the bottom of the pot.
-> I keep stirring for another 3 minutes.
I then stop the oven and cover the dish for another 5 minutes.
Ready to Eat!? "A table mes Cheris" Like mother always said to us kids..
I take my favorite plate, Villeroy and Boch, and coat the bottom of it with Parmesan cheese.
Using my pasta tongue, I serve myself a large amount of pasta.
My mouth is salivating.
Even after all these years, I think this recipe will remain one of my favorites.
I sprinkle more cheese on top and add parsley for decoration.
Gas Stove Versus Induction Stove
A few additional words on the stove that I am using.
I have been using an induction stove for the last 15 years and I love it!.
I have to say that it is the best decision I have ever made in my kitchen.
I was going to install a gas stove and did some research.
I was worried about the huge gas tank that had to be installed outside my house.
I was concerned about the emission of carbon dioxide while cooking.
My son had asthma, so that decision was a no-brainer.
I like many aspects of induction cooking; you can read more about them here in the article I wrote about “Gas Stove versus Induction Stove”, but one of them is the ease of cleaning.
After making a mess, you just wipe it off, in a few seconds, your cook top is clean and ready to the next recipe.
I like the timer too, so convenient.
Like my father Gaby, a chef and master Baker for more 60 years in Provence, always said, “Cooking involves the selection of appropriate ingredients, proper measurement, and adherence to appropriate timing”.
