Potato rosettes, croquettes and bird nest | Christmas side dish

this way of cooking potatoes is one my go to recipe for the holidays season and trust me , you want to try the croquettes😋😋😋
🧅🥕INGREDIENTS🥕🧅
1.5 kg floury potatoes ( variety suited for puree)
50 to 100 g butter (depending on how rich you want the mixture to be)
100 grams grated gruyere or comte cheese
4 egg yolks
salt and pepper (for seasoning)
Few pinches of grated nutmeg (for the seasoning)

For the breading:
flour
1 egg
breadcrumbs

Bake for 15 minutes until golden at 180 to 200 degrees c ( depends how your oven performs)
The croquettes need to be deep fried at 180 degrees Celsius for 3 minutes.
