Bolognese Sauce, an Authentic Italian Recipe!

A Classic, an Authentic Bolognese Sauce

Alla Bolognese, which is another name for Bolognese sauce, is a real sauce that comes from Bologna, Italy. Traditional Bolognese sauce is usually made with ground beef, celery, tomato paste, and both white and red wine to give it a unique flavor. The process of making the best bolognese requires simmering the ingredients for several hours so that the flavors of the meat and vegetables meld together. The red wine also helps to evaporate some of the liquid in the sauce and gives it a thicker texture that is perfect for pasta dishes. This classic Italian dish has been enjoyed around the world for hundreds of years, and it is still one of the most popular Bolognese recipes today.

    Bolognese Sauce History

The history of this dish can be traced back to the late 19th century. At the time, Bologna was a bustling industrial city with a large population of immigrants. Many of these immigrants were from rural areas and brought with them traditional recipes from their home regions. One of these recipes was a meat-based sauce known as ragù, which was typically served with pasta.

Bolognese sauce is one of the oldest and most traditional Italian recipes. This meat sauce has been around since the Middle Ages, and it has been improved over the years. It all starts with a ragu alla Bolognese, which is made by browning ground meat in a pan with a wooden spoon, adding white wine, and then allowing the mixture to simmer for several hours. Once it’s ready, tomatoes are added to make a tomato sauce; usually San Marzano is used, as they are considered to be among the best tomatoes in Italy. Lastly, salt and pepper must be added so that the flavor can fully develop. This will make a ragù alla Bolognese that is full of flavor and has a lot of different layers. This ragù can then be used as a base for making an Italian Bolognese Sauce; by simply adding cheese or cream, you can create this classic pasta dish that has now become popular around the world! So if you’re looking to make Bolognese sauce at home, just follow these steps—it’s easy, delicious, and sure to impress your guests!

Over time, the recipe for ragù began to evolve as it was passed down through generations and adapted to the ingredients that were readily available in Bologna. The traditional recipe called for a mixture of ground beef, pork, and veal, which were simmered with tomatoes, onions, carrots, and celery. This mixture was then typically served over wide noodles like pappardelle.

In the early 20th century, the dish began to spread outside of Bologna and Italy. Italian immigrants brought the recipe with them as they settled in other parts of Europe and the Americas. Today, spaghetti Bolognese is enjoyed in households and restaurants all over the world, but it still holds a special place in the hearts of the people of Bologna.

    Why Spaghetti with Bolognese Sauce?

Spaghetti with Bolognese Sauce is a classic Italian cuisine that is both tasty and easy to make. As the dish became more popular, it began to be served with spaghetti, which was a more widely available pasta in the region. And thus, the dish we now know as spaghetti Bolognese was born.

It is worth mentioning that the Bolognese sauce that we know today is quite different from the original recipe of ragù a la Bolognese. The original recipe was a slow-cooked meat-based sauce that contained very little tomato, but today’s Bolognese sauce contains a heavy amount of tomato and is often served with spaghetti.

Which other pasta can I use?

When it comes to pasta, there are so many options available! From classic spaghetti and penne to more creative shapes like farfalle, orecchiette, and cavatappi, the possibilities are endless. But if you’re looking for a different type of noodle to use in your dish, there are plenty of other tasty pastas out there. You can try using angel hair pasta for a light and delicate texture, or rigatoni for a heartier bite. Fettuccine is also an excellent option when you want something that holds its shape well in liquid-based sauces. For even more unique textures and flavors, consider exploring the world of gluten-free pastas made from ingredients like quinoa or chickpea flour. Whatever kind of pasta you decide on, be sure to read the instructions carefully before cooking – some kinds need to be boiled for longer than others!

Does Italian spaghetti Bolognese have meat in it?

Italian spaghetti Bolognese is a very popular dish in Italian cuisine. The traditional recipe for this dish calls for ground beef or pork to be added to the tomato and pasta sauce, along with tomato puree. However, some store bought bolognese sauces contain no meat. If one wishes to make an authentic Italian bolognese sauce without any meat, it is possible to do so. Firstly, start by adding the tomato, pasta sauce and tomato puree into a pot on medium heat. Once the mixture begins to bubble, add a few tablespoons of bechamel sauce so as to give the sauce a creamy texture. Finally, at the end of the cooking process, add some herbs and seasonings according to your taste preference. This great recipe will give you an authentic Italian Bolognese sauce that can also be used in lasagna Bolognese dishes!

What is Bolognese Sauce traditionally served with?

Bolognese sauce is a rich and flavorful Italian sauce that can be found in stores or made at home. The true bolognese sauce should use tomato, onions, celery, carrots, garlic, and ground beef or pork. Many people love this sauce because its combination of flavours create an incredibly tasty meal. To make the sauce, start by cooking the vegetables until soft before adding in the meat and tomato paste. Once everything is cooked through and the sauce has reduced down, it’s ready to serve over your favourite pasta. The sauce looks thick and hearty with small pieces of celery and carrots visible throughout. Ragù Bolognese, also known as Bolognese ragu, separates from the sauce once it’s been cooked for a few hours, making it even more delicious! This type of Bolognese can be served over any type of pasta but is best enjoyed with spaghetti or tagliatelle. If you have any leftover sauce then you must store it correctly for up to three days in an airtight container in the fridge. Enjoy your Bolognese ragu with a glass of red wine for a truly authentic Italian experience!

My Favorite Pasta Bolognese Easy Recipe

How to Make Authentic Bolognese Sauce with a Provencal Twist!

I have cooked this dish for thousands of people throughout my life while I was working in restaurants in in the Alpes and in Youth centers in the Uzes area, in Provence.

I prepared this wonderful pasta dish with my father during the after game soccer city lunch in the park.

I even enjoyed teaching this dish to students who participated in my classes at the Cambridge Center for Adult Education for more than 10 years!

I tried to perfect my recipe over the years, and what you will see in this video and below is the result of 50+ years of trying.

I heard a few years ago that Ming Tsai of Simply Ming, WGBH was asking what the secret was to making the best Bolognese sauce.

Well, Chef Ming, if you read this, I’ll tell you what it is.

My authentic “Jean-Louis Provence Kitchen Herbs de Provence!”

That’s right. My Herbs de Provence, which I put together over 30 years ago, is sold locally at various farms and Wholefoods stores in the New England area.

I call it “the Swiss knife” of any recipe.

With my Herbs de Provence, everything tastes better.

Anyway, here’s how I make my best pasta Bolognese!

I prepare and put aside all my ingredients.

First, I mince a fresh sweet onion and 2 cloves of fresh garlic.

Then I grate 2 cups of Parmesan cheese.

I put aside 4 cups of water (for the sauce), I open a Pastene 28 oz Crushed peeled tomatoes, and I add 2 TBSP of my Herbs de Provence in a small glass container.

I get my double boiler, which I fill with 16 cups of water and 3 TBSPN of my own Grey Sea Salt.

I also get a large Dutch Oven cast iron ready.

I take the ground beef (85-15) out of the fridge in its packaging.

    Authentic Bolognese Sauce Recipe

The Sauce (with my secret) - Step by Step

1- Once I have everything ready, the first thing I do is sauté the minced onion in the Dutch oven for 3 minutes with the lid on at medium heat.

2- I then add the minced garlic along with the gray sea salt and freshly ground black pepper.
-> I cook, lid off, for another 3 minutes while stirring.

3- Once I get the onion and the garlic tender and with a nice color, I add the ground beef.
I incorporate the beef into the onion and the garlic.
-> I cover my cast-iron pot for 3 more minutes.

4- I then remove the lid and let the extra liquid to evaporate for another 6 to 9 minutes, depending if I am using fresh or frozen meat.
-> The goal is to get a nice color at the bottom of the pot while stirring constantly to avoid any burned meat.
-> That will add a wonderful flavor to the dish.

Remember, the stove is set to the same medium heat throughout of all of these first steps.

5- Then I add the crushed peeled tomatoes.

7- Once the can is empty, I fill it with the 4 cups of water that I have put aside earlier and pour to the pot.

And then, that is where the magic happens!

8- I add 2 TBSP of my out-of-this-world “Jean-Louis Provence Kitchen” Herbs de Provence.

I stir and cover the dish and let it cook for another 9 minutes.

The Pasta - Mama Mia! That is what I called my sweet mother Yvette

1- While my sauce is cooking, I put my double boiler on high heat and add the 16 ounces of water, the 3 TBSP of Gray Sea Salt and one tsp of Olive oil (helps the pasta not to stick together).

2- Once the water boils, I add the pasta and cover.

4- Once I get to the boiling point, I reduce the heat to medium.

5- I look at the pasta packaging and follow the cooking time directions.

6- I then set my timer to that time. Usually, 9 to 12 minutes, depending of the pasta.

Note: The Pasta Bolognese is usually cooked with spaghetti.
However, I found that the Pastene Italian Pappardelle Pasta is a much better choice for this particular dish. The pasta is thin but larger in width, so it “sucks in” more of the delicious sauce, making it even more flavorful.

7- 3 minutes before the end of the pasta cooking time, I remove the pasta from the boiler and pour them into the sauce.
-> I stir more, making sure that nothing sticks in the bottom of the pot.
-> I keep stirring for another 3 minutes.

I then stop the oven and cover the dish for another 5 minutes.

Ready to Eat!? "A table mes Cheris" Like mother always said to us kids..

I take my favorite plate, Villeroy and Boch, and coat the bottom of it with Parmesan cheese.

Using my pasta tongue, I serve myself a large amount of pasta.

    My mouth is salivating.

Even after all these years, I think this recipe will remain one of my favorites.

I sprinkle more cheese on top and add parsley for decoration.

    Gas Stove Versus Induction Stove

A few additional words on the stove that I am using.

I have been using an induction stove for the last 15 years and I love it!.

I have to say that it is the best decision I have ever made in my kitchen.

I was going to install a gas stove and did some research.

I was worried about the huge gas tank that had to be installed outside my house.

I was concerned about the emission of carbon dioxide while cooking.

My son had asthma, so that decision was a no-brainer.

“Cooking involves the selection of appropriate ingredients, proper measurement, and adherence to appropriate timing”

I like many aspects of induction cooking; you can read more about them here in the article I wrote about “Gas Stove versus Induction Stove”, but one of them is the ease of cleaning.

After making a mess, you just wipe it off, in a few seconds, your cook top is clean and ready to the next recipe.

I like the timer too, so convenient.

Like my father Gaby, a chef and master Baker for more 60 years in Provence, always said, “Cooking involves the selection of appropriate ingredients, proper measurement, and adherence to appropriate timing”.
