And Cheese it's not a metal pan this Looks better on the table and look at That shape that shape is really adding a Lot of visual interest to the whole Thing in a perfect world you are Figuring all of this out a few days Ahead or at least very early that Morning so that it's done and then you Can take all of your dishes and put them Out of the way another advantage to Planning all of this out ahead is that If say you don't have the exact right Platter for your turkey or your stuffing You can ask someone to bring it and now Label what goes in what this is very Important because I know I Forget when people come to your house For Thanksgiving you want to greet them With a festive beverage you should have Something alcoholic and something Non-alcoholic so that everybody has Something to drink my favorite cocktail For Thanksgiving and pretty much anytime Is a Manhattan I love ay Manhattan and For this batched version I'm going to Add a teensy teensy bit of absinth which Will just um make sure that everybody Sees Rainbows will it will it will it yes all Fits so you want to have your your twist Strips at the ready and then for each Cocktail you just do a little twist Right on top and then the lemon oil goes Into the cocktail and then you drop this
In so just have your strips ready but Don't twist yet and for a cherry garnish Which I love with the Manhattan these Are great Lardo cherries or I make my Own mariso cherries every summer I get My sour cherries I put them in mariso or Brandy and you let them sit and then by Thanksgiving they're perfect people tend To think of Thanksgiving vegetables Individually the prussel Sprouts the Yams the green bean casserole I say take All of those vegetables roast them on Big sheet pans and put them together on A platter they're so much more beautiful You'll have the different textures the Different colors you can garnish it and It's also easier did you know that it's Not just pumpkin seeds that are really Delicious to salt and roast you can do It with any kind of squash seed and Delicas they get super crispy when you Oil them and put them in the oven so Save your seeds and make yourself a Little treat don't think I'm not going To roast it because I am [Music] You just want to oil your veg sprinkle Them with salt before [Music] Roasting so you want to pull each tray As it's ready however long it takes and What you're looking for is golden brown At the edges but not golden brown all Over because you really want to keep
That vibrant Color so here's the thing when you have A roasted vegetable platter that is as Pretty as this do you even need to Garnish it but the reason that we're Going to add these garnishes is for Flavor so this is just a garlicky yogurt I'm going to do a little cider vinegar And some hot honey cumin seeds these You're barely even going to see them but They add so much flavor if you have time To toast them put them in a dry Skillet Till they start to smell delicious Sesame seeds think of it as like an Everything bagel parsley and pomegranate Seeds cuz I can't get enough of them [Music] I have another tip for you that is all About tweaking your family recipes to Bump up the flavor these are the recipes You make year after year here's how to Make them special gravy can you guess What I'm going to suggest as a special Secret gravy Ingredient anchovies just hear me out Anchovies are not traditional in gravy But they have an Umami just Rich Savoriness that it works so well with The drippings the And it just rounds it out and you don't Taste fishiness and you don't even taste Anchovy you just taste yum what is that I don't bother with Gravy Master cuz we Don't care what color our gravy is but
This is a time honored food stylist Trick nothing wrong with a little Gravy Master cranberry sauce cranberry sauce Is already beautiful I mean it is the One Jewel likee Presence at the table Every year but I like to add to its Color and to its flavor by cooking The Cranberries in wine red wine you can use Any kind of red wine to make this you Can also use port if you happen to have A bottle of open port that works really Well too just cut the sugar a little bit Since Port is so sweet we're not a mac And cheese family but I know that it is A very big part of many thanksgivings Out there and it is delicious instead of Topping it with the usual breadcrumbs Try something new like crushed Cheez Itss or pretzels or crackers or Japanese Rice crackers anything crunchy is going To work I don't know what do you guys Think Che it Che chees is it you Whoa okay cheit we are doing cheit so I'm just going to I'm going to make Crumbs out of these so the trick here is You don't want to crush these as finely As your breadcrumbs you want them to be A little more textured and that way They'll be even Crunchier as you can see I'm measuring Very carefully you don't have to measure With this topping you just want it to Look like wet sand so you just add Enough butter
[Music] Okay here's a crazy idea for stuffing But it's so good so hear me out cheese a Little bit of cheddar cheese in your Stuffing and on top is almost like a mac And cheese stuffing mashup so for people Who don't usually have mac and cheese on The table if you want to add delicious Cheesiness add it to the stuffing it's Really good this recipe here is my Cornbread stuffing stuffing is where you Play around with bread the base of the Stuffing is so customizable to what you Love and what you have my mother used Bagels she put them in the freezer for Weeks I love cornbread because I love The sweetness Brios is amazing Hala is Another great one rye bread crusty sour Dough the bread in a stuffing is your Choice the only trick is you want to add Some of the cheese to the bread mix and Then you want some on top because that Cheese on top is actually the best part Cuz that's the part that gets a little Melty and a little crunchy at the edges [Music] And the butter cubes right on Top let your green beans be green Instead of making a green bean casserole That makes some kind of brown just Revel In their beautiful verant color cook Them lightly and serve them simply I Have a really great recipe that does JustThat garnish garnish garnish I mean Could there be a more beautiful bird Than this one I don't think so but it's Going to be even more beautiful when we Garnish it with this array of stunning Automnal deliciousness what I like to do Is I like to buy a lot of beautiful Things I like to buy herbs and then I'll Go to the market and buy like little Grapes and Lady apples and CLE pears and I'll Char some lemons and I'll have all Of that ready and when I'm plating Things I will just grab things and I Will just garnish and add a little this And a little of that I don't worry about It too much but even just like half of a Lemon that's been charred on the platter With a turkey adds so much Character one thing I want to point out Is notice how the turkey is carved on The platter this is how you serve a Turkey right so if you've never made Turkey before and this is going to be Your first Thanksgiving to roast a Turkey I would say instead of trying to Start with a whole bird bird which is Really it's heavy it's complicated it's Hard to get the timing right start with Turkey Parts buy a bone in turkey breast Buy some turkey legs and roast them on a Sheet pan in the oven it's so much Easier you won't have to wield a heavy Pan and then when you carve it up no One's going to know the difference all
Right and now garnishing is the fun part You just put things where you think they Should Go this guy here that's nice no that's Too symmetrical here no oh no maybe do One more pair [Music] Here and for your mashed potatoes Instead of just adding butter I like to Let the butter get brown after you've Browned the butter throw some herbs Right into the pan some Sage or some Other herbs get them fried and crispy And then those can go on top of your Mashed potatoes too and then you can add Pools these pools of golden brown butter On top of your mashed potatoes it's Beautiful and it tastes so good [Music] For dessert there's nothing boring about Thanksgiving pies they're fantastic but They are a little monochromatic have Your pies but have a cranberry dessert Too because it's really pretty I suggest A cranberry cake with a pink buttercream And then sugared cranberries right on Top so I have whole cranberries here you Can use either fresh or frozen fresh is Better but if Frozen is what you've got Use what you've got and I'm just going To coat them in simple syrup and Basically the simple syrup is going to Act like glue and it's going to allow Granulated sugar to stick onto the
Cranberries see how this syrup is Getting pink at the end of this save the Syrup which is going to taste lightly Cranberry is and use the syrup for all Kinds of things and now you just want to Roll them in the sugar another good Thing for your kids to do if you don't Mind them eating all the sugar as they Go even if you just want to do these and Add them to the tops of your pies it'll Just add this instant beautiful magenta Color and of course one of the most Important garnishing tips there is if You see a flaw little imperfection hide It with a Garish if you're making Thanksgiving Maybe for the first time establish your Own Thanksgiving Traditions right this Is on you now you're the host these are Your Traditions to pass forward to your To your family to your friends so think Of things that make you really happy and Then do them every year some of our Favorites include watching the peanuts Thanksgiving special together as a Family and while we do that we eat a Giant bowl of popcorn another one that We start a few weeks before Thanksgiving We collect leaves in the park beautiful Autumnal leaves in the park we press Them in all of my cookbooks and then we Use those to decorate the table and we Have so much fun as a family just Gathering all the leaves pressing them
And then taking them out and admiring Their shapes a few weeks later their Colors they're so vibrant okay these I Love I love these These are cherries Like look how pretty these are right the Most special of all when Dalia was five In kindergarten she made our Thanksgiving centerpiece SL mascot his Name is marshmallow he's really special To our family he's held together by love And Glue the most important part of Thanksgiving is your family is your Friends your people you want to just Hang out with your people that's why You're there then it's the sides and the Co tails and then turkeys like a fourth Thanksgiving is a lot of work but it is So worth it and hopefully these tips Made it even better for you and you'll Just have a lovely day with the people You love cheers
